Grape variety: Rondinella, Corvina, Croatina Cabrusina and Dindarella, manually harvested from vineyards ideally suited to their hillside location.
Vinification: In February of the following year the wine undergoes a second fermentation called Ripasso, which is to leave the wine in contact with the pomace (grape skins) from the fermentation of Recioto and Amarone.
This wine is aged for at least one year in oak barrels, where malolactic fermentation begins.
